For the Ted Perez Drink of the Week, a very simple, classic cocktail was chosen: the Daiquiri. Although its ingredients are quite simple (rum, lime juice and sugar), it can be a difficult drink to mix properly due to the balance of sweet vs sour. This drink is made in numerous other variations including the frozen Daiquiri, the Daiquiri Floridita and the Hemingway Daiquiri (another variation that Ted Perez tested alongside the original).

Continuing a string of classic cocktails, Ted Perez + Associates sampled another staple found at any well worth two bits - the Manhattan. This Official IBA cocktail is a simple combination of Rye or Canadian whisky with sweet vermouth and a dash of Angostura Bitters (see here for more on Angostura and its influence in cocktail recipes). The IBA also recognizes two other variations that use dry vermouth and a mix of dry and sweet vermouth (named a Manhattan Dry and Manhattan Medium, respectively).

The Ted Perez cocktail of the week is the Tom Collins.
The first Tom Collins recipe appeared in the 1876 edition of Jerry Thomas’ “The Bartender’s Guide”. It is believed that Thomas created the recipe in response to the Great Tom Collins hoax of 1874. Regardless of muse, a job well done Jer.

The "Drink of the Week" for the week of Cinco de Mayo was Ted Perez’s own House Margarita. This spin on the popular Mexican cocktail has the enhancement of muddled jalapeño for spice and a Hennessey cognac float for smoky flavor. In addition to being mixed with tequila, Ted Perez also sampled this with mezcal. Our preference is mezcal.

For the Drink of Week, Ted Perez + Associates undertook a tasting/study of Whisky. The three-week process encompassed three different varieties: American Bourbon whisky, Irish whisky and Scotch whisky. If wondering, no, this was not an onerous assignment nor is it even remotely representative of what could have been. Rather, a good excuse to revisit some old friends [Lagavulin + Red Breast] and get to know a few new friends.

Ted Perez + Associate's recent work for Sprint, which includes the NOW Clock and Reuters Sprint Widgets, have been recognized with the following honors:

The Ted Perez Cocktail of the Week is the simple, classic Rum & Coke. The cocktail, whose official name is Cuba Libre or “Free Cuba”, is a highball containing Coke, lime juice and rum [the lime portion is often left out when prepared in the US]. It is known by this name as an official IBA [International Bartenders Association] cocktail. Like most popular drinks, the Cuba Libre has a somewhat mysterious origin with various accounts, some rooted in fact and others in fiction. For example, Bacardi claims that the cocktail was invented at a bar in Old Havana, Cuba during the Spanish-American War. A potential problem with this account is that Coca-Cola wasn’t introduced to Cuba until after the war ended. For the most part, it is generally agreed upon that the drink was invented in Cuba around the year 1900 when Coca-Cola was first brought over by American troops. From this, it is easy to understand how the drink got its name from the battle cry of the Cuba Liberation Army.

The Drink of the Week, Brass Monkey, was chosen in honor of a recently departed member of the Ted Perez family - Senator John Hays.
The name "Brass Monkey" tends to mean different things based on the context of its use. From the English colloquial expression and the 1986 single by the Beastie Boys to an English folk band and, of course, the cocktail. Brass Monkey roots go back to when it was produced as a premixed cocktail by the Heublein Company between the 1970s and 1990s. The label was a unique alternative when first introduced due to the fact that most liquor stores only carried beer, wine and hard liquor, not mixed drinks. Today, the Brass Monkey tends to be a lesser-known cocktail and its recipe varies widely. A few of versions include:
Equal parts beer and orange juice.
A mixture of gin, triple sec, tequila, orange juice, sour mix and grapefruit juice.
Equal parts of dark rum, vodka and orange juice.
The variation Ted Perez chose to study was, as we believe it, born on the hard-scrabble streets of Baltimore. In short, the rule is to consume a bottle of malt liquor until the beer level is even with the top of the label, fill the bottle back up with orange juice and roll it slowly across the ground to create a homogonous mixture. Grip, tip + sip.

On holiday at the Sweeney Farm, Great Pride, in County Cork, Ted hears of President Ronald Reagan's call for public and congressional support of his SDI - Star Wars - defense initiative. Torn, Ted discussed the news with his host Ewan Sweeney. "Is he a good President? Who am I to say? I can vouch for him as a man and as an accomplished card player. If pressed, I'd say no. No, Dutch is not a good President and that hurts me because I consider him a dear friend. I simply can not find favor - especially when challenged by bold faced lies such as 'The United States does not start fights.' If he was here today, I'd say, straight-away, 'Listen Dutch, we're Americans, we were born fighting. Embrace it good man and cast aside any commie who dares question our right to enforce the law.'"

In lieu of the traditional weekly cocktail, Ted Perez + Associates did a two week taste testing of wine and cheese pairings, specifically cheeses that pair with Riesling. Riesling is a white, aromatic grape varietal that has perfumed aromas in addition to a high acidity [hence its characteristic dry and crisp taste]. The high acidity of Riesling also makes it suitable for extended aging (high quality or off-dry Riesling wine has been enjoyed at an age exceeding 100 years). Riesling's long history extends as far back as the 15th century when Count John IV of Katzenelnbogen referenced "22 shillings of Riesling vine cuttings for the vineyard" in his storage inventory [dated March 13, 1435]. In 1477, the grape was also documented in Alsace under the spelling "Rissling".
Riesling is highly "terrier-expressive", meaning the character and taste of the wine can vary greatly based on its place of origin. In order to maintain a greater variety of flavors and characteristics, labels were selected from almost every major Riesling-producing region including Germany, France, California and Australia. To pair with these varying labels, Ted Perez selected popular cheeses from each wine's respective region. Pairings include Monterey Jack and Colby Jack cheeses from California, Morbier cheese from France and Gouda cheese from Germany.
